Chocolate Mousse (based on a recipe from Fibre Fuelled by Will Bulsiewicz) Servings: 4-6

This recipe is perfect for any party and something the whole family will enjoy. It’s decadently delicious and creamy, and you would never know it’s made with tofu. I love topping mine with fresh berries and cacao nibs or crushed nuts.
Ingredients:
300g lite/soft tofu, drained but not pressed
200ml coconut cream
120ml maple syrup
65g unsweetened raw cacao powder
2 tablespoons smooth peanut butter (no added salt)
1 teaspoon vanilla extract
1 teaspoon sea salt
Directions:
Place the tofu, coconut cream, maple syrup, cacao powder, peanut butter, vanilla, and salt into a food processor or high-powered blender and puree until very smooth and well mixed
Divide among 4 to 6 ramekins and allow to chill in the refrigerator for 30 minutes or more to set
Dust with more cacao powder or raw cacao nibs and fresh berries for decoration.
